Makes 5 Pints
Ingredients:
~ 4 pds. Strawberries
~ 10 cups White Sugar
~ 1/4 cup Frozen Apple Juice
~ 2 Tbsp. Lemon Juice
Directions:
1) Blend Strawberries in a blender.
2) Add strawberries, sugar, apple juice and lemon juice in a very large pot.
3) Stir over medium heat until sugar dissolves and it comes to a full rolling boil.
4) Boil rapidly for approx. 40 mins till your syrup thermometer reaches 220 degrees.
5) Remove from heat. Skim off the foam. Add to jam jars to within 1 inch from top.
6) Process in water bath for five minutes.
