StrawHoney Jam

Ingredients:
~ 5 cups of sliced strawberries ( 2 lbs)                  
~ 1 cup of homemade cherry juice (Fr. Kitch Witch Cookbook)
~ 1 cup of honey                                                       
~ 1 box of no sugar needed pectin

Directions: 
1)Slice and stem 2lbs of strawberries.



2)In large pot place sliced strawberries,honey,cherry juice and pectin crystals.



3)Slowly bring up to a boil.
4)Bring mixture to a full rolling boil. Boil for 3 minutes.
5)Remove from heat.
6)Stir and skim off foam.
7)Pour into sterlized jars.
8)Clean rim of jar to make sure no jam on rim.
9)Place sterlized lids on jars.
10) Place in hot water bath and process 10 minutes.
11) Remove from heat and allow to cool.



*This is a really good jam for anyone who does not want to have sugar in their jam. Honey is a very good natural sweetener.*
