Prairie Chickens (Not really as they are extinct up North.)


This recipe is pretty much the same as Chicken Thighs, I just wanted to share it as the meat is wild and you might not think that you can preserve it the same way ;) Plus If you are not eating this fresh than this is the ONLY way to eat it. Freezing it just doesn't taste as good.

Directions:
* Brown your breasts on both sides. Add Salt and Pepper


* You do not need to add any water. The meat will make its own juice.
* Put in Sterilized Mason Jars. Two per jar.


* Pressure Can for 90 mins.

Look I know that once chicken is canned it doesn't look appetizing at all. I get it, but get over it, ha ha. It's amazing. Super juicy and tender.
