Beans

Usually my Mother and I preserve our bean harvest by canning them, but I am finding that no one in our family is really interested in them. So this year we decided to freeze them! This may look like ALOT of beans, but once you get them trimmed and partially cooked it really isn't that much. So grateful that bean plants can be harvested more than once!

Trim your beans like you normally would. You can half them or quarter them, just make sure to trim the ends off.

Have a timer ready to go and set for two minutes.

Boil a pot of water. Drop your beans in for two mins. (Only do about three handfuls at a time)

Pull them out and drop them in ice cold water for another two mins.

Drain them, bag them and freeze them! Yes, it is that simple.

Get a system going so that you while you are cooling the one set, you are also boiling the next set. Makes the whole process quicker.
