Makes 3 Pints
Ingredients:
~ 8 cups Raspberries
~ 6 cups. Sugar
~ 2 Tbsp. Lemon Juice
Directions:
1) You can blend raspberries in a blender, mash them with a potato masher or whip them with your mixer. Your choice.
2) Add raspberries to large pot. Cover with sugar and stir. Let stand on counter for 1-2 hours till juice is released from berries.
3) Add lemon juice. Heat on low until mix begins to bubble.
4) Bring to a roaring boil. Boil hard for 20 mins. Stir until thickens. Test with syrup thermometer for 220 degrees.
5) Skim foam off top.
6) Put in jars. Fill to one inch from top.
7) Process in bath canner for five minutes.
