Apricot Jam

Ingredients:
~ 4 cups of sliced apricots or
approx 11 apricots sliced
~ 7 cups sugar
~ 1/4 cup lemon juice
~ 1 pouch of liquid certo

Directions:
1) Slice apricots into measuring cups, making sure you have 4 cups. No more no less.



2) In large pot place apricots, sugar, and lemon juice.
3) Slowly bring up to a boil, stirring often.


4) Bring the apricot mixture to a rolling boil. Boil for 2 minutes.
5) Remove from heat and add liquid certo.
6) Stir and skim off foam for 5 minutes.
7) Pour jam into sterilized jars.
8) Clean rim of jar to make sure no jam on rim.
9) Place sterilized lids on jars.
10) Place in a hot water bath and process for 10 minutes.
11) Remove from heat and allow to cool.



To Make Lid Decorations:
~ 1/4 of a metre of fabric or
tablecloth vinyl

Directions:
~ Cut 5 1/2 inch circles for as many jars you want to trim. 
~ Gently remove the band off of jar when the jars are sealed and cold. 
~ Place circle on top of jar and gently screw lid back on. Do not break seal.
