Bread and Butter Pickles

Ingredients: 
~Cucumbers
~ 1/3 c. coarse salt
~ 6 red onions
~ Ice

Brine:
~ 3 c. Vinegar
~ 5 c. sugar
~ 2 tbsp. Mustard Seed
~ 1 1/2 tsp. Turmeric
~ 1 1/2 tsp. Celery Seed

Directions:
1) Slice cucumbers and onions.



2) Put a layer down of cucumbers and onions down, cover with a layer of salt and ice. Keep alternating the layers till you use up all your cucumbers. ( I put mine in my sink)



3) Set for 3- 5 hrs or overnight. Make sure the cucumbers are covered in ice.
4) Drain
5) Add to sterilized jars
6) Mix your brine ingredients together in a large pot. Bring to boil. Mix well. This mixture is enough for 3 Quarts, you may want to use large pot and double recipe. 



7) Pour brine over the veggies.
8) Clean tops of jars off. Place sterilized lids on.
9) Set on counter to cool and seal.




* Let them stand One week or Two before eating *
* I used 14 pds of cucumbers and 3 bags of ice to get 15 Quarts*
* I let my jars set overnight, but two did not seal. I then got the water boiling in the bath canner and canned them for ten mins to get a seal on. *
