Mom's Creamy Potato Soup


Makes 3 Adult Servings & 3 Child Servings
Ingredients
~ 4-5 Medium to Large Potatoes
~ 1 Carrot
~ 1/2 pound of Bacon
~ Salt & Pepper
~ 1 cup of Shredded Cheese of your choice (I use Cheddar) or 5 tbsp. of Cheese Whiz
~ Dried/Fresh Green Onions
* Sliced Celery is also an option to add
* A dollop of sour cream in the centre of each bowl of soup is also a good option to add.

Thickening Sauce
~ 2 tbsp. margarine/butter
~ 3-4 tbsp of flour
~ 1/2 cup of milk

Directions
1) Dice up your potatoes and add to a pot of boiling water (around four cups of water).
2) Shred the carrot and add to the pot.
3) Salt and pepper to taste
4) Fry or bake Bacon. You can either cube it before cooking or after.
5) Add Bacon to the soup mix.
6) Once Potatoes are tender in a separate pot melt margarine.
7) Add flour to the melted margarine until thick.
8) Slowly whisk in milk. Use about 1/2 of cup of milk. You want this mix to thicken and not to become runny.
9) Add the Thickening Sauce to the soup mix and stir in.
10) Add your cheese and dried/fresh green onions and Serve.
