Ingredients:
~ 40 Peaches
~ 40 Nectarines
Syrup Mix:
~ 1 c. white sugar
~ 2 c. water
* you can use less sugar if you want your jars to be less syrupy*
Directions:
1) If you have sterlilized your jars in your bath canner have it on med-low, a soft boil while you complete your next steps. If not bring it up to a soft boil. You want your water to be hot and ready to can.
2) Bring a large pot of water to boil. Add as many whole peaches as you can and boil for 30 seconds to 1 min...No longer or they will get too soft. For your nectarines boil them for 1 min to 1 1/2 mins.
3) Drain the pot and fill with cold water. Pull out a peach/nectarine and cut in half. Pull it apart, pull out seed and peel skin off. Slice them. I slice in large junks so they don't get mushy after canning. With Nectarines you may have to peel them with a knife instead of your hands.
4) Add your fruit to the jars. Fill to top of the BOTTOM ring. Make sure you have sterilized your jars FIRST.
5) Now would be a good time to boil your lids and rings to sterilize them.
6) Take another large pot and add about 5 mixtures of syrup mix. Bring to a boil. Pour into jars fill to top of BOTTOM ring. Gently clean tops of jars off with washrag. Add your lids.
7) Add your jars to the water bath canner. Make sure the glass isn't touching each other. Put the lid on. Bring to a boil. Then set timer for 25 mins. Pull them out and and add some more.
