I was in the garden when my mom mentioned that if I wanted something that tastes similar to spinach to grab the beet greens. Now is the perfect time to harvest them before they get too tough. Mom knows best eh?
I love that you use every part of beets. I normally can my beets, but I have sooo much still. So with this harvest of greens I juice the beets and stalks (so yummy!)
Cut the greens off the stalks and chop them up and freeze them in bags...pretty simple!
