Garden Beets

Ingredients:
~Beets
~Coarse Salt
~Rubber Gloves

Directions:
1) Trim off beet tops, leaving 1 inch of stem and roots. This will prevent the color from bleeding out.
2)Wash them and put in large pot on stove. Seperate the smaller ones from the larger ones as the smaller ones will cook faster.
3) Fill pot or pots with water and Boil till you can stick a fork in them. Not too soft though! Just in the middle.
4) Drain and plunge into cold water.
5) Put your rubber gloves on and pull the skins, roots and stems off. Slice the larger ones at about 1 inch width, slice the smaller ones in halves.
6) Add coarse salt to sterilized jars. 1/2 tsp for pints and 1 tsp for quarts. Add the beets.
7) Pour boiling water over the beets to one inch from top of jar. (bottom ring). Clean the tops of jars off.
8) Add the sterilized snap lids and rings.
9) Process in bath canner for 20 mins to ensure a seal.
