Rhubarb Filling

Ingredients:
4 c. Rhubarb (approx. 10 stalks)
1 c. sugar
1/2 c. flour
1/2 tsp cinnamon

Directions:
1) Harvest and wash rhubarb.


 
2) Cut rhubarb into 1/2 -3/4 inch pieces
3) Put in large pot. Add sugar & cinnamon. 



4) Put on medium heat and bring to a gentle boil. Boil Rhubarb till soft. Takes 5-10 mins. Not too soft.
5) Pull from heat and add flour. Mix in well. You want it to be thick.



6) Add to sterilized jars. Wipe tops off and add sterilized lids & rings.
7) Process in bath canner for 15 mins.

* Rhubarb goes soft fast so keep at gentle boil and do not turn heat up.*
* I doubled this recipe for two half quarts.....triple it if you want two full quarts*
